Instant pot Mexican rice
I love Mexican rice and this Instant Pot Mexican rice recipe does not disappoint and because it is prepared in the Instant Pot and a super fast side.

This recipe utlizes the saute feature of the Instant Pot, which set the Instant Pot apart from the standard pressure cooker. No each pan needed.
Press the sauté button on the Instant Pot, adjust to high, add 1 Tbsp oil and add 2 cups of rice. Sauté rice until fragrant.
TIP – If you don’t want to find all of the cilantro stems after cooking, tie them together with kitchen twine.
Allow pressure to release naturally and fluff with fork

- 1 Tbsp oil
- 2 cups rice
- 1 16oz tomato sauce
- 1 garlic clove - chopped
- 3 cups chicken stock
- 1 Tbsp cumin
- 4 or 5 cilantro stems
- press the sauté button on the Instant Pot
- adjust to high
- add 1 Tbsp oil
- add 2 cups of rice
- sauté rice until fragrant
- press cancel button
- add tomato sauce, garlic, chicken stock, cumin and cilantro stems
- stir to combine
- Seal instant pot
- cook on manual high for 24 minutes
- allow pressure to release naturally
- fluff with fork
